Cheesy Potatoes & Sausage

10 Medium Potatoes
2 pkgs of Hillshire Farm Beef Sausage
1 Envelope of Hidden Valley Ranch Dressing
1 Stick of Butter - melted
Chopped Greeen Onions
Salt & Pepper
Garlic Powder
Mrs Dash Steak Seasoning
Asiago Cheese Grated
Pepper Jack Cheese Shredded
Mild Cheddar Cheese Shredded 

- Preheat oven to 400°
- Wash potatoes and cut them into chunks 
- Spray 9x13 pan with cooking spray 
- Put potatoes and green onions in pan then sprinkle with ranch dressing, garlic powder , mrs dash, salt and pepper
- Drizzle potatoes with butter
- Cover with foil and cook for 30 mins or until potatoes are slightly tender
- Cut into 1" chunks the sausage
-  Add sausage to potatoes, stir and toss all together, add a little more salt, pepper or garlic if needed
- Recover with foul and cook for 30 more mins
-  Add a little grated Asiago cheese, pepper jack, cheddar and cook for 10 more mins uncovered. 
- Before you serve top with a little more green onions and pepper jack cheese.

Oven Roasted Baby Potatoes



Ingredients
  • 1.5 lb Baby Yellow Potatoes
  • 1 Package Good Season's italian Dressing
  • Extra virgin olive oil
  • Grated Parmesan Cheese

Directions
  1. Grease/spray with non stick spray a 9x13 baking dish
  2. Boil potatoes till they are almost cooked.
  3. Drain potatoes cut in half and place skin side down
  4. Drizzle olive olive on the potatoes
  5. Sprinkle package of Italian dressing over the potatoes, then sprinkle with cheese
  6. Bake in oven at 450° for 15-20 mins or till potatoes are browned and tender.

Ingredients
  • 1 packet hidden valley ranch dressing mix (2/3 ounce)
  • 1/4 tsp black pepper
  • 4 pork chops (about 3/4 inch thick)
  • 2 Tbsp Paprika
  • 1/4 cup Flour

Directions
  1. Add seasoning and salad dressing mix with pepper.
  2. Rub mixture on both side of pork chops.
  3. Arrange pork chops in a single layer on baking pan or broiler rack.
  4. Sprinkle with paprika.
  5. Bake at 450 degrees Fahrenheit for 20 to 25 minutes, or until cooked through.

Homemade Corn Tortilla




Homemade Corn Tortilla

Ingredients
  • 2 cups masa meseca/corn flour
  • 1/2 tsp sea salt
  • 1/2 Tbsp olive oil
  • 1 1/2 cups warm water

Directions
  1. In a medium bowl, whisk 2 cups masa meseca and ½ teaspoon kosher salt. Stir in 1½ cups water and ½ tablespoon olive oil.
  2. Knead in bowl until dough forms. If the dough seems too crumbly and does not come together, add a bit more water. Let sit for about 5 minutes.
  3. Heat a skillet or pan over high heat. 
  4. Get out your tortilla press. Cut down the sides of a plastic bag, and place it on both sides of the press. Pull off a golf-ball sized piece of the dough. Place the ball in the middle of the tortilla press, place the top over the ball, and squeeze down the handle.
  5. Peel the tortilla off of the plastic. 
  6. When the skillet is hot, place a tortilla on the skillet and cook about 30 seconds to 1 minute, until cooked. Flip and cook other side until cooked.
  7. Transfer to a plate or tortilla warmer, and cover with a dish towel.

Bow-Ties with Bacon and Tomatoes



Ingredients
  • 1 Package Turkey Bacon
  • 1 Medium Onion
  • 1 14.5 oz can of Diced Tomatoes with garlic and onions
  • 1 3/4 cups Vegetable or Chicken Broth
  • 3 cups Uncooked Bow-Tie Pasta
  • 1/8 tsp Pepper
  • Parmesan Cheese

Directions
  1. In large skillet, cook bacon over medium-high heat, stirring frequently until browned. Reduced heat to medium. Add onions, cook stirring frequently until tender.
  2. Stir in tomatoes, broth, uncooked pasta and pepper. Heat to boiling over high heat. Reduce to medium heat, cook uncovered, stirring occasionally until pasta is tender and mixture is a thick as you like. You may have to add a little liquid if pasta is to firm. However the texture of the pasta will be a bit firmer because it was cooked in the liquid with the other ingredients.

One Pot Pasta



One Pot Pasta

Ingredients
  • 12 Oz Pasta Linguine
  • 15 Oz Diced tomatoes with liquid
  • 3/4 Large sweet onion diced
  • 5 Cloves Garlic sliced thin
  • 1/2 tsp Red peper flakes
  • 2 tsp Dried oregano leaves
  • 2 Large spigs of basil chopped
  • 4 1/2 cups Vegetable broth
  • 2 Tbsp Extra virgin olive oil

Directions
  1. Add all in one pot. Bring to boil. Then cover and simmer on low till pasta is cooked. Stir every 2 mins or so. 
  2. Serve with some parm shaved or grated on top.

Snickerdoodle Cookies



Snickerdoodle Cookies

Ingredients
  • 1 cup unsalted butter, softened to room temperature (2 sticks)
  • 1 cup Granulated Sugar
  • 1/3 Dark Brown Sugar
  • 1 Large egg
  • 2 tsp vanilla extract
  • 3 cups all - purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 2 tsp and 1/2 ground cinnamon
  • 1/2 tsp salt
  • Topping :  1/4 cup granulated sugar and  1 tsp cinnamon

Directions
  1. Preheat oven to 375F degrees. Line two large cookie sheets with parchment paper or silicone baking mats. Set aside.
  2. Make the topping: toss 1/4 cup granulated sugar with 1 teaspoon cinnamon in a small bowl. Set aside.
  3. Make the cookies: In a large bowl using a hand-held mixer or stand mixer with paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugars on medium speed until fluffy and light in color. Mix in egg and vanilla. Scrape down the sides as needed. Set aside.
  4. In a medium size bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, and salt. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients in 3 different parts. The dough is quite thick and you may have to stir the rest by hand.
  5. Roll 2 tbsp of cookie into a ball. Roll the dough balls into the reserved cinnamon-sugar topping. Sprinkle extra cinnamon-sugar on top if desired. Bake cookies for 11-12 minutes. The cookies will be very puffy and soft. When they are still very warm, lightly press down on them with the back of a spoon or fork to help flatten them out. Allow cookies to cool on the baking sheet for 10 minutes and transfer to a wire rack to cool completely.
