Crockpot Ham Potatoes and Poblano Peppers

This meal is so easy and can be served so many different ways. Tonight we had it with warmed up corn tortillas on the side.  Tomorrow we will have it in a burrito and the night after with some scrambled eggs and toast.  I doubled the recipe to have plenty of leftovers



Ingredients:
  • 1 1/2 lb Red potatoes, peeled and sliced
  • 8 Oz Thinly sliced ham
  • 2 Poblano peppers cut into thin strips
  • 2 Tbsp Extra virgin olive oil
  • 1 Tbsp Dried oregano leaves
  • 1/4 tsp salt
  • 1 cup shredded cheddar cheese or jack
  • 2 Tbsp Finely chopped fresh cilantro

Directions:
  1. 1. Combine all ingredients except cheese in slow cooker, mix well
  2. 2. Cover and cook on low 7 hours
  3. 3. Transfer ham potato mixture to serving dish, sprinkle with cheese and cilantro.
