- 1 1/2 lb Red potatoes, peeled and sliced
- 8 Oz Thinly sliced ham
- 2 Poblano peppers cut into thin strips
- 2 Tbsp Extra virgin olive oil
- 1 Tbsp Dried oregano leaves
- 1/4 tsp salt
- 1 cup shredded cheddar cheese or jack
- 2 Tbsp Finely chopped fresh cilantro
Directions:
- 1. Combine all ingredients except cheese in slow cooker, mix well
- 2. Cover and cook on low 7 hours
- 3. Transfer ham potato mixture to serving dish, sprinkle with cheese and cilantro.
